
easy turkey bolognese

ingredients:
1/4 cup extra virgin olive oil
1 chopped onion
4 minced garlic cloves
1 finely chopped carrot (i throw it in the food processor)
1 finely chopped celery stalk
1 pound of ground turkey
3 cups marinara sauce
1/4 cup chopped fresh basil (or 1 tbsp dried)
sea salt + ground pepper
spaghetti (i used einkorn pasta)
instructions:
1. heat the oil in large pan over medium heat. add onion + garlic, cook until translucent (about 5 min)
2. add carrots + celery for another 5 min
3. add turkey & sauté for 1 minute, then decrease heat to medium-low & simmer for 15 minutes (stir often)
4. stir in basil & season sauce with salt + pepper
***save 1 cup of spaghetti water to add to pasta sauce as needed (don’t need to use all of it)
