gluten free carrot cake
ingredients:
4 large eggs
2 cups of shredded carrots
½ cup honey
a splash of vanilla extract
1½ cups almond flour
1tsp cinnamon
1tsp nutmeg
¼ tsp salt
½ tsp baking soda
½ tbs butter to grease pan
(optional ½ cup walnuts)
instructions:
- preheat oven to 350º and butter a 8-9 inch cake pan
- whisk all the wet ingredients
- fold in dry ingredients (do not over mix)
- pour into cake pan and bake for 22-25 minuets
