gluten free carrot cake

ingredients:

4 large eggs

2 cups of shredded carrots

½ cup honey

a splash of vanilla extract

1½ cups almond flour

1tsp cinnamon

1tsp nutmeg

¼ tsp salt

½ tsp baking soda

½ tbs butter to grease pan

(optional ½ cup walnuts)

 

instructions:

  1. preheat oven to 350º and butter a 8-9 inch cake pan
  2. whisk all the wet ingredients
  3. fold in dry ingredients (do not over mix)
  4. pour into cake pan and bake for 22-25 minuets
