OATMEAL BANANA MUFFINS
Makes 6 large muffins or 12 regular muffins
INGREDIENTS:
2 cups oat flour
1/2 cup almond flour
2 tbs coconut flour
2 tsp baking powder
1/2 cup buttermilk (milk with 1 tsp of apple cider vinegar let sit for 5 min)
1/4 cup avocado oil
3/4 cup maple syrup
3 eggs
1 banana
INSTRUCTIONS:
- grease or line muffin tin and preheat oven to 350F
- add vinegar milk and let sit for 5 min
- in a medium bowl mix dry ingredients together
- in a large bowl mash banana and mix in the rest of the the wet ingredients
- add the dry ingredients to the wet and fold to incorporate
- divide batter into muffin tin and bake for 25-35 min
