PROTEIN OATMEAL CUPS
***makes about 3 cups
INGREDIENTS
11/2 cup rolled oats (80g)
1 cup eggs whites
1-2 tbsp milk of choice
2 tbsp maple sugar (or sweetener of choice)
1 tsp baking powder
1/2 tsp apple cider vinegar
cinnamon
1 tbsp chia seeds
1 tbsp flax seeds
optional: scoop of protein powder
INSTRUCTIONS
- preheat oven to 350F degrees, and grease your 6-cup muffin pan with oil spray.
- in a large bowl, mix together all of your ingredients.
- divide the mixture into each of your muffin cups.
- add in any additional toppings (i.e. berries, almonds, etc.). then bake in the oven for 25-30 minutes.
- let cool for about 10 minutes, remove from pan and enjoy.
toppings ideas: greek yogurt, granola, berries, nut butter, etc.
