
pumpkin spice baked donuts

INGREDIENTS:
1 cup of gluten-free oat flour
1/2 cup of pumpkin puree
1/2 cup of maple syrup
1/4 cup of melted coconut oil
2 tsp pumpkin spice
1/8 tsp sea salt
1/2 tsp turmeric
1/4 tsp baking soda
1/2 tsp vanilla extract
2 tsp apple cider vinegar
1 large egg + 1 egg white
1 tbsp ground flax
**glaze (optional)
1/4 cup coconut butter
1-2 tbsp maple syrup
2-4tbsp nondairy milk
INSTRUCTIONS:
1. mix together all dry ingredients, then mix together all wet ingredients in another bowl.
2. combine both mixtures together until blended. let sit for 5-10 min to allow oats to absorb liquid.
3. I used my Ninja Kitchen Foodi Dual Heat Air Fryer (on dual heat rapid bake setting) at 325 degrees. OR heat your oven to 350 degrees.
4. oil your donut baking tray & fill with batter. bake for 14-17 minutes (depending on whether you use oven or air fryer).
4. remove and let cool for 5-10 min then glaze. enjoy !! xo
