
ROASTED ACORN SQUASH WITH GARLIC GREENS SAUCE

INGREDIENTS:
Acorn Squash
EVOO
Salt + Pepper
Garlic Greens Sauce:
2-3 handfuls of spinach
4-5 cloves of garlic
2 tbsp EVOO
2-3 tbsp tahini
pinch of sea salt
2 jalapeno peppers
3-4 tbsp nutritional yeast
INSTRUCTIONS:
- preheat your oven to 375 degrees.
- wash your acorn squash well, then cut off the top and bottom. then in half through the center.
- remove the insides from your squash, then cut into 1-inch slices.
- place your slices in a mixing bowl and coat with EVOO, salt and pepper.
- roast in the oven for 15-20 minutes, until softened.
- while your acorn squash is roasted, blend your sauce ingredients into a blender until smooth.
- remove squash from oven, assemble on a plate, and serve with garlic greens sauce! enjoy
