INGREDIENTS:

1/4 cup greek yogurt

1 grated garlic clove

1 tsp chopped dill

salt and pepper to taste

2 slices of bread of choice

2 egg

olive oil

1 tbs butter

1/2 tsp paprika

optional red chilli pepper flakes

 

INSTRUCTIONS:

  1. (yogurt spread) mix yogurt, garlic, salt/pepper, and dill and set aside
  2. in a saucepan fry eggs in olive oil and set aside (for a lighter option you can poach the eggs)
  3. (butter sauce) on medium heat melt butter in the saucepan that was used for eggs. When bubbling add paprika and mix until fragrant and vibrant in colour (and chilli pepper If you want heat)

To assemble:

  1. toast bread and spread yogurt mixture on top, add fried egg and spoon butter sauce on top
  2. ENJOY!!
