LEFTOVERS FOR BREAKFAST

Leftovers for breakfast? Even though it might not look like the typical breakfast, let me tell you, it’s one of my favourite things to enjoy for breakfast.

Breakfast doesn’t have to be limited to eggs and toast or pancakes — it can be anything you want. The only parameters I have for breakfast is building a balanced plate including a healthy source of carbs, protein and fats (and finishing with some fresh fruit). I recently used some leftovers from dinner the night before, homemade chicken shawarma, to make a breakfast pita! It was absolutely delicious and kept me full and satisfied for hours. It was packed with: homemade chicken shawarma, micro broccoli, pickled beet sauerkraut, roasted red onion, hummus and an over-easy egg.

Take this as a challenge to use up your leftovers from the night before to make a delicious and different breakfast! Break from routine and swap your avocado toast for a new breakfast plate.
