.... so what are sprouted grains?
sprouted grains are not only whole grains, but the process of sprouting the gain naturally increases the vitamin and mineral content. they’re grains that have begun to sprout — meaning they have usually been soaked allowing sprouts to emerge from the germ of the whole grain.
but does that mean it’s healthier?
sprouted grains have more available nutrients than mature grains — including folate, iron, vitamin C, zinc, magnesium, and protein. they also have a naturally lower amount of starch and gluten compared to normal grains, making it easier to digest. they also have amino acids like lysine that you won’t find in regular whole grain products. sprouting the whole grain also breaks down phytate — a form of phytic acid that decreases the absorption of minerals and vitamins in the body.
where do i find sprouted-grain products?
you can find sprouted-grain goods such as breads, muffins, crackers, flours, etc. at a farmer’s market and at your local grocery store! i typically find them in the freezer section (because they typically don’t use any preservatives). make sure to read the ingredient list and confirm you can pronounce everything on the list before buying the product though!
